With summer here in Australia I thought it was time for a favourite smoothie recipe. An afternoon smoothie is perfect snack to keep you going until dinner, with the added benefit of fruit they are easy to digest and light on the stomach. I know I hate that heavy feeling in my stomach after a big lunch or afternoon tea, it makes me lethargic for the rest of the day. This one is nice and sweet, and easily adjusted to add extras or substitute with one of your favourite ingredients 💕
1 cup of pineapple
1 cup of strawberries
1 scoop of coconut vanilla ice cream
2 tablespoons of coconut milk
1 cup of spring water
..........blend until the desired consistency
There are so many options with smoothies, a couple of additional ideas is to add some bananas, chia seeds or beetroot which will also create a more vibrant pink colour.
